For over twenty years, the MSU Master of Science in Food Safety program has led the way in online graduate education. The fully online format provides the flexibility needed for food safety professionals to earn an advanced degree while continuing to excel in their careers.

This 30-credit master’s program features a multidisciplinary curriculum that integrates core food safety sciences with food law and regulatory principles. Electives are varied and can be tailored toward students’ interests or career aspirations. Some students choose to concentrate their electives in areas such as packaging, food law or public health, with opportunities to earn certificates in these specialized fields. These flexible pathways allow students to stack focused credentials alongside the degree, strengthening specialization and expanding professional impact.

Rather than completing a traditional thesis, students conclude the degree with a non-thesis applied project that addresses a real-world food safety challenge directly connected to their professional role, allowing immediate organizational impact.

The curriculum emphasizes both scientific depth and applied leadership. Advanced coursework develops technical expertise in areas central to food safety, while case-based assignments, industry-aligned projects and regulatory perspectives build the practical judgment required to lead in complex environments. Course content is designed for real-world application, allowing concepts to be put into practice immediately within the food safety profession.
